Bisalda's thoughts on the challenge:
"Why did I decide to go Vegan you may ask? Well, where should I Start? February is my birthday month & I turn 40! I have 3 beautiful children, ages ranging from a one & a half year old to an 18 year old in college. I run one of the busiest cafés in Boston's Financial district & lately i'm feeling tired & run down.
To be honest, lately my eating habits have not been all that great. For the most part I've always been a healthy eater with the occasional cheat meal. But lately I've been a candy/cookie afternoon snack pick me up & Lemon Oreos for dinner kinda girl! SUGAR, SUGAR, SUGAR is what my body craves! I'm not really a big red meat eater but I do enjoy an occasional turkey sandwich or salad topped with grilled chicken/salmon.
Going Vegan will be my way of realigning my body & mind. Nothing worth your wild comes easy... so thank you Sebastians for offering so many healthy options & for including me in the WickedFresh Challenge. Follow me on my journey & I'll show you how it's done!"
